Ragu de vita cu farfalle / Beef ragout with farfalle


Ingrediente / ingredients:

- 1 lingură de ulei de măsline - 1 tablespoon olive oil
- 250g bacon  - 250g bacon 
- 2 morcovi - 2 carrots, 
- 2 bastoane de țelină,  tocate fin - 2 celery sticks, finely chopped
- 1 ceapa , tocata marunt - 1  onion, finely chopped
- 3 catei de usturoi, zdrobite - 3 garlic cloves, crushed
- carne de vită 1.8 kilograme, tăiată în bucăți de 8 cm - beef meat 1.8kg, cut into 8cm pieces
- 2 x 800 g conserve de rosii cubulete - 2 x 800g cans diced tomatoes
- 375ml (1 1/2 cesti) vin rosu - 375ml (1 1/2 cups) red wine
- 3 frunze de dafin uscate - 3 dried bay leaves
- 2 crengi mari de rozmarin proaspat - 2 large sprigs fresh rosemary
- 400 g farfalle - 400 g farfalle
- Parmezan pentru a servi  - Shredded parmesan to serve

                Se încălzește uleiul într-o oală de stoc pe foc mediu. Adaugati bacon, morcov, telina, ceapa si usturoiul si gatiti-l, amestecand, timp de 5 minute sau pana cand este moale. Se amestecă carne de vită, roșiile, vinul, frunzele de dafin și rozmarinul. Aduceti la fierbere. Reduceți căldura la foc mic și fierbeți, acoperit parțial, amestecând ocazional, timp de 2 ore sau până când carnea de vită este licitată.

             Heat the oil in a stock pot over medium heat. Add bacon, carrot, celery, onion and garlic and cook, stirring, for 5 minutes or until soft. Stir in the beef, tomato, wine, bay leaves and rosemary. Bring to the boil. Reduce heat to low and simmer, partially covered, stirring occasionally, for 2 hours or until the beef is tender.


Se adauga 3-4 linguri de parmezan.

Add 3-4 tablespoons of Parmesan.
          


 Se fierb pastele si cu 2-3 minute inainte de a fi gata se pun in sos.

Boil the pasta and with 2-3 minutes before it is ready  put them in the sauce.


Optional - am pus niste telemea de oi - ii da un gust aparte.

Optional - I put some sheep cheese - gives a special taste.


Amestecam totul.

Mix well.


Se serveste cu parmezan deasupra.

Serve with parmesan on top.

Cotlet de porc cu salvie si cidru de mere / Pork Chops with sage and Apple Cider Glaze


Ingrediente / ingredients:

- 2 kg carne de porc - 2 kg of pork 
- 1 l de cidru de mere sec - 1 l of dry apple cider
- 500 g ciuperci de padure  - 500 g of forest mushrooms 
- o capatana de usturoi - a garlic clove
- salvie - sage
- unt - butter
- ulei de masline - olive oil
- sare si piper dupa gust - salt and pepper to taste

Pentru inceput topim o lingurita de unt cu 2-3 linguri de ulei de masline si 2-3 frunze de salvie.

We melt a teaspoon of butter with 2-3 tablespoons of olive oil and 2-3 leaves of sage.



Adaugam carnea si o lasam pe fiecare parte pana se rumeneste putin.

Add the meat and leave it on each side until it gets a little brown.


Dupa ce am terminat carnea, in sosul ramas adaugam ciupercile, usturoiul, sare si piper dupa gust. Le lasam 3-4 minute.

After we have finished the meat, add the mushrooms, garlic, salt and pepper to taste in the remaining sauce. We let them 3-4 minutes.


Turnam ciupercile peste carne, iar deasupra punem cidru.

We poured the mushrooms over the meat, and on top we put cider.


Se lasa la cuptor o ora, o ora si jumatate.

Leave in the oven one hour, an hour and a half.


Se serveste calda cu garnitura de ciuperci.

Serve warm with mushroom garnish.

Pateu de pui si rata / Chicken & Duck Pâté



Ingrediente / ingredients:

- 500 g ficatei de pui - 500 g chicken liver
- 500 g carne de rata - 500 grams of duck meat
- 50 ml smantana - 50 ml of sour cream
- 100 g unt - 100 g butter
- 2 cepe - 2 onions
- 3 catei de usturoi - 3 cloves of garlic
- 100 ml vin alb - 100 ml white wine
- o lingurita de cimbru uscat  - a teaspoon of dry thyme


Ficateii ii punem la prajit in 2 linguri de ulei. Dupa ce si-au schimbat culoarea , adaugam ceapa , usturoiul, cimbrul si vinul. Ii lasam la foc mic pana se patrund bine.

The liver is fried in 2 tablespoons of oil. After they have changed color, add onions, garlic, thyme and wine. I'll let them down until they get through well.


Carnea de rata o fierbem bine cu 2-3 frunze de dafin, sare si piper boabe. O bagam la robot si o tocam. Adaugam ficateii.

Bol the duck meat  with 2-3 leaves of bay, salt and pepper grains. Put it in to the blender. We're adding the liver.


Adaugam smantana si  untul si lasam la blender pana obtinem o pasta fina.

Add sour cream and butter and leave the blender until we get a fine paste.


Se lasa 2-3 ore la rece inainte de servire.

Let to cool for 2-3 hours before serving.

Penne cu sunca si ciuperci / Penne with ham and mushrooms


Cremoase si delicioase, aceste paste fac un pranz satios.

Creamy and delicious, these pasta make a good lunch.

Ingrediente / ingredients:

- penne - penne
- 200 g sunculita afumata - 200 g of smoked ham
- 200 g ciuperci - 200 g of mushrooms
- 1/2 lingurita cimbru - 1/2 teaspoon thyme
- 3-4 catei de usturoi - 3-4 cloves of garlic
- 300 ml smantana pentru gatit - 300 ml of cooking cream
- sare si piper dupa gust - salt and pepper to taste
- parmezan - parmesan

Fierbem pastele conform timpului indicat pe pachet. Sunculita o taiem fasii subtiri si o prajim la foc mediu .

Boil the pasta according to the time indicated on the package.  Cut the ham into thin strips and fry over medium heat.



Ciupercile le prajim in 2-3 linguri de ulei de masline, impreuna cu usturoiul, cimbru, sare si piper.

Fry the mushrooms  in 2-3 tablespoons of olive oil with the garlic, thyme, salt and pepper.



Punem ciupercile peste sunculita si adaugam smantana. Amestecam continuu.

Put the mushrooms over the ham and add the sour cream. We were constantly mixing.



Lasam la foc mic pana se ingroasa putin sosul.

Let simmer until sauce thickens slightly.



Se servesc fierbinti cu mult parmezan.

Serve hot with parmesan.

Placinta cu mere si pere / Apples and pears pie



O placinta foarte aromata - Craciunul intr-o placinta!

A very flavorful pie - Christmas in a pie!

Ingrediente / ingredients:

- 500 g faina - 500 g flour
- o lingurita de sare - a teaspoon of salt
- 325 g apa calda - 325 g of warm water
- o lingura de ulei - one tablespoon of oil
- o lingura de otet - a spoonful of vinegar
- 200 g de unt, untura si ulei in cantitati egale - 200 g butter, grease and oil in equal quantities
- 1,5 kg mere - 1,5 kg apple
- 1,5 kg pere - 1,5 kg pears
- scortisoara, anason stelat, cuisoare, nucsoara  - cinnamon, star anise, cloves, nutmeg
- zahar dupa gust  - Sugar to taste

Pentru inceput facem aluatul: intr-un bol punem faina, sarea, apa, o lingura de ulei si otetul.

First make the dough: In a bowl put the flour, salt, water, a tablespoon of oil and vinegar.


Framantam circa 10-13 minute.

Knead about 10 to 13 minutes.


Topim untul, uleiu si grasimea si turnam cam 5- 6 linguri peste aluat .
Impartim aluatul si incepem sa facem foile. Ungem bine blatul de lucru si cu un sucitor sau cu mana intindem foile.

Melt butter, oil and grease and pour about 5-6 tablespoons over the dough.

We divide the dough and start making the sheets. Brush well the worktop and  with a rolling pin or by hand stretch sheets.


Umplutura: curatam de coaja merele si perele si le taiem cubulete. Le punem impreuna cu mirodeniile si zaharul la foc potrivit , amestecand continuu.

Le rasucim si le punem in tava. Le coacem la foc mic aproximativ 45 minute sau pana se rumenesc frumos.

Sos cu ghimbir / Ginger Sauce


Un sos delicios ce poate fi servit cu o friptura de pui, peste sau porc sau cu o portie de cartofi prajiti!

A delicious sauce that can be served with a roast chicken, fish or pork or  with  french fries!

Ingrediente / ingredients:

- 2 linguri de maioneza - 2 tablespoons of mayonnaise
- 2 linguri de smantana - 2 tablespoons of sour cream
- 2 linguri de iaurt grecesc - 2 tablespoons of Greek yogurt
- o lingurita de praf de ghimbir - a teaspoon of ginger powder
- o lingurita de boia dulce - a teaspoon of sweet paprika
- 2-3 catei de usturoi striviti - 2-3 cloves of garlic crushed
- sare dupa gust - Salt to taste
- putin ardei iute - a little hot chili pepper

Punem toate ingredientele intr-un bol si amestecam bine. Inainte de servire se tine cel putin o ora la frigider.

Put all the ingredients in a bowl and mix well. Before serving, keep at least one hour in the refrigerator.

Pui cu legume ''en papillote'' / Chicken with vegetables '' en papillote ''


 O reteta rapida si sanatoasa. Piept de pui suculent , plin de arome si legume coapte cu un strop de ulei de masline.

Ingrediente / ingredients:

- un piept de pui - a chicken breast
- 2 cartofi - 2 potatoes
- 2 morcovi - 2 carrots
- 10 ciuperci - 10 mushrooms
- 2 cepe rosii - 2 red onions
- ulei de masline - olive oil
- sare si piper - salt and pepper
- rozmarin - rosemary
- o lamaie - a lemon
- usturoi - garlic

Incalzim cuptor.
Pe o folie de aluminiu punem jumatate de piept de pui, stropim cu ulei de masline, adaugam sare, piper, rozmarin, usturoiu si zeama de lamaie.

We heat the oven.

On an aluminum foil we put half a chicken breast, sprinkle with olive oil, add salt, pepper, rosemary , garlic and lemon juice.



Legumele le taiem cubulete si le punem in alta folie. Le stropim cu ulei de masline, sare, piper, rozmarin , usturoi si zeama de lamaie.

Vegetables: cut them into cubes and put them in another foil. Sprinkle with olive oil, salt, pepper, rosemary, garlic and lemon juice.



Impachetam bine.

Wrap well.



Lasam la cuptor 30 minute la foc mediu.

Leave the oven 30 minutes on medium heat.
