Fursecuri cu ciocolata / Chocolate cookies


Ingrediente / ingredients:
- 300 g faina - 300 g flour
- 250 g zahar - 250 g sugar
- 80 g cacao - 80 g cocoa
- 100 g zahar pudra - 100g powdered sugar
- 4 oua - 4 eggs
- 100 g unt - 100 g butter
- 1 plic praf de copt - 1 baking powder
- o esenta de rom - A rum
- un praf de sare - a pinch of salt



Mixam untul cu zaharul.

Mix the butter with the sugar.



Adaugam ouale unul cate unul apoi faina, cacao, sarea, praful de copt si esenta de rom.

Add eggs one by one and then the flour, cocoa, salt, baking powder and rum.


Mixam toate ingredientele.

Mix all the ingredients.


Lasam compozitia la frigider pentru minim 2 ore apoi formam bilute si le dam prin zahar pudra.

Let the mixture in the refrigerator for at least 2 hours then we form little balls and give them in the powdered sugar.


Le punem intr-o tava tapetata cu hartie de copt si le dam la cuptor pentru 10-15 minute.

We put them on a tray lined with baking paper and give them to the oven for 10-15 minutes.

Tort Trio de ciocolata / Triple Chocolate Mousse Cake






Acest tort l-am facut cu ocazia Sf Nicolae pentru fetita mea Nicole. M-am inspirat din reteta  Jamila Cuisine si am gasit aceasta reteta exceptionala. Este un tort fin care imbina 3 tipuri de ciocolata, un rasfat culinar pentru iubitorii de ciocolata.

I made this cake  for my daughter Nicole. I was inspired from Jamila Cuisine and I found this exceptional recipe . It's a fine cake that combines three types of chocolate, a culinary delight for chocolate lovers.


Ingrediente / ingredients:

Pentru blat / For the cake:
- 65 g faina - 65 g flour
- 120 ml iaurt - 120 ml of yoghurt
- 60 g zahar - 60 g sugar
- 60 g unt - 60 g butter
- 20 g cacao - 20 g cacao
- 1 ou - 1 egg
- 1/2 lingurita bicarbonat de sodiu - 1/2 teaspoon baking soda

Pentru mousse- ul de ciocolata amaruie / For the dark chocolate mousse:
- 300 g ciocolata amaruie - 300 g dark chocolate
- 250 ml frisca  - 250 ml cream
- 50 ml apa rece  - 50 ml cold water
- 40 g unt - 40 g butter
- 5 g gelatina - 5 g gelatin

Pentru mousse-ul de ciocolata cu lapte/ / For the milk chocolate mousse:
- 300 g ciocolata cu lapte - 300 g milk chocolate
- 250 ml frisca  - 250 ml cream
- 50 ml apa rece  - 50 ml cold water
- 40 g unt - 40 g butter
- 5 g gelatina - 5 g gelatin

Pentru mousse-ul de ciocolata alba/ / For the withe chocolate mousse:
- 300 g ciocolata cu lapte - 300 g white chocolate
- 250 ml frisca  - 250 ml cream
- 50 ml apa rece  - 50 ml cold water
- 40 g unt - 40 g butter
- 5 g gelatina - 5 g gelatin

Pentru inceput facem blatul: amestecam untul cu zaharul, adaugam ou si iaurtul. Amestecam bine. Adaugam cacao, faina si bicarbonatul de sodiu.
Coacem compozitia 15-20 de minute la foc potrivit .

For the beginning make the cake: Mix butter and sugar, add egg and yogurt. Mix well. Add the cocoa, flour and baking soda.
Bake the composition  15-20 minutes at medium heat.



Primul mousse este cel de ciocolata amaruie. Topim la bain marie ciocolata impreuna cu untul.

The first  is the dark chocolate mousse. Melt the chocolate in a bain marie with butter.




Intre timp punem gelatina la hidratat. Dupa ce s-a hidratat o adaugam peste ciocolata topita.

Meanwhile put the gelatin to hydrated . After you hydrated we add melted chocolate over.




Lasam ciocolata topita sa ajunga la temperatura camerei si o amestecam cu frisca batuta bine.

Let the melted chocolate to reach room temperature and then mix well with whipped cream .



Turnam mousse-ul peste blat si il tinem la frigider pana preparam urmatorul mousse.

Pour over the cake the  mousse and keep it in the fridge until the next  mousse is ready.



Asa preparam urmatoasele mousse-uri.

This is the method of preparing mousse and  prepare the other.


 


Lasam tortul la frigider peste noapte.

We leave the cake in the refrigerator overnight.

Se poate orna cu sos de ciocolata, bomboane , fulgi de ciocolata sau se poate servi ca atare.

You can decorate with chocolate sauce, candy, chocolate chips or you can serve as such.

Musaca greceasca / Greek Moussaka



Ingrediente / ingredients:
- 2 kg vinete - 2 kg of large round aubergines
- 1 kg carne tocata de vita sau amestec porc + vita  - 1 kg ground beef or mix - pork + beef
- 1/2 cescuta ulei de masline -  1/2 cup olive oil
- 2 cepe mari -  2 large onions
- 5 rosii decojite - 5 peeled tomatoes
- 1/2 cana vin alb - 1/2 cup white wine
- sare si piper - salt and pepper
- branza feta - grated feta cheese
- 3-4 polonice de sos bechamel - ladles of bechamel sauce 
- 3-4 cartofi feliati foarte subtire - 3-4 potatoes thin sliced

Curatam vinetele si le taiem  felii . Le punem intr-o tigaie cu o lingura de ulei de masline pana se rumenesc usor. Cartofii ii feliem foarte subtire.

Peel eggplants and cut them into slices. We put them in a pan with a tablespoon of olive oil until slightly browned. Cut potatoes very thin slices.


 Punem carnea si ceapa intr-o tigaie cu ulei de masline  pana se rumenesc. Adaugam vinul. Dupa ce scade sosul adaugam rosiile tocate marunt. Lasam sa scada sosul.

Prepare the meat by browning it woth the oil and onion, wich should be finely chopped. Stop browning process by pouring the wine. Add the tomatoes skinned and finely chopped, the salt and pepper and allow to boil till the moisture has been absorbed.


Intr-o tava pentru cuptor turnam un polonic de sos bechamel, punem un rand de vinete, un rand de branza rasa, un rand de carne si o luam de la capat pana terminam carnea si vinetele.

In a baking pan pour a ladle of béchamel sauce, put a row of eggplant, a row of grated cheese, a row of meat and start over to finish the meat and eggplant.


Desupra inchidem cu un rand de cartofi feliati subtire.

On top we close with a row of thin sliced potatoes.


Adaugam un rand de branza rasa si bagam la cuptor 30-45 minute.

Add grated cheese and  stuffing in the oven 30-45 minutes.


Servim fierbinte.

Serve hot.

Pizza Quatro Stagioni


Ingrediente / ingredients:

- un blat de pizza - A pizza dough
- sunca praga - Prague ham
- carnati afumati - smoked sausages
- masline - olives
- mozzarella - mozzarella
- ciuperci - mushrooms
- sos de rosii - tomato sauce
- oregano - oregano

Pentru inceput pregatim toate ingredientele.

For start prepare all ingredients.



Intindem aluatul intr-o tava si il ungem cu sosul de rosii.

Roll the dough into a pan and Brush it with tomato sauce.



Adaugam toate ingredientele, iar mozzarella o punem deasupra.

Add all ingredients and mozzarella put it on top.


Bagam la cuptor pana se rumeneste frumos.

Put in the oven until nicely browned.

Friptura de rață cu piure de cartofi / Roast duck with mashed potatoes



Ingrediente / ingredients:

- o rata - A duck
- fulgi de ardei iute - Chilli flakes
- 5-6 catei de usturoi - 5-6 cloves garlic
- sare si piper - salt and pepper
- rozmarin - rosemary
- salvie - sage
- boia de ardei iute - Paprika
- pentru piure: cartofi, unt , lapte si sare - For Mashed potatoes, butter, milk and salt


Rata o pastram intreaga dar se poate si portiona. O ungem cu toate condimentele si o dam la cuptor pentru o ora jumate - 2 ore, depinde de marimea ratei. din cand in cand o stropim cu grasimea care o lasa in tava.
Separat fierbem cartofii , ii zdrobim, adaugam unt, sare si lapte.
Portionam rata si o servim pe un pat de piure de cartofi.

 Keep the whole duck   but it can and be partitioned. Brush with all the spices and give in the oven for an houar and half  - 2 hours, depending on the size of the duck. occasionally a brush her with  the sauce  that leaves it in the tray.
Separately boil the potatoes, mash them, add butter, salt and milk.
Portion the duck  and serve on a bed of mashed potatoes.

Mix de paste cu pui si mozzarella la cuptor / Chicken Mozzarella Pasta al forno



Niciodata nu folosim un pachet de paste si mereu ne raman, asa ca am facut acest mix de paste cu pui si mozzarella la cuptor. Un deliciu culinar!!!!

Never use a package of pasta and we always remain, so I made this  Chicken Mozzarella Pasta al forno. A culinary delight !!!!

Ingrediente / ingredients:

- puteti folosi ce paste aveti prin casa - You can use any pasta you have in the house
- 200 g piept de pui - 200g chicken breast
- 100 g bacon - 100 g bacon
- 2 linguri pasta de tomate - 2 tablespoons tomato paste
- 3-4 catei de usturoi - 3-4 cloves garlic
- busuioc - basil
- 100 g parmezan - 100 g parmesan
-  sare si piper dupa gust - Salt and pepper to taste


Prajim pieptul de pui in 2-3 linguri de ulei. Adaugam baconul si mai lasam 3-4 minute pe foc.

Fry the Chicken  in 2-3 tablespoons of oil. Add bacon and leave 3-4 minutes on the fire.



Adaugam usturoiul si pasta de tomate .

Add garlic and tomato paste.


Fierbem pastele si le adaugam in tigaie. Amestecam usor.

Boil the pasta and add to pan. Mix gently.


Intr-o tava punem mozzarella si adaugam jumatate din compozitie.

We put mozzarella in a pan then add half of composition.


Adaugam putin busuioc si parmezan.

Add a little basil and Parmesan cheese.


Mai punem un rand de mozzarella, paste, busuioc, parmezan si mozzarella.

We add a row of mozzarella, pasta, basil, Parmesan and mozzarella.


Bagam la cuptor pentru 20 de minute.

Stuffing in the oven for 20 minutes.

Paine cu banane / Banana Bread


Ingrediente / ingredients:

- 500 g faina - 500 g flour
- 4 banane - 4 bananas
- un pliculet de drojdie - one sachet of yeast
- 150 g unt - 150 g  butter
- 150 g zahar - 150 g sugar
- 150 ml lapte - 150 ml of milk
- 2 oua - 2 eggs


Intr-o cratita punem 50 g zahar la topit. Adaugam 75 g unt si lasam sa se formeze un sos caramel. Acest sos il turnam in tava pe care o bagam la cuptor. Peste sos punem feliute de banana (cca 2 banane).
Dizolvam drojdia in putin lapte cald si o amestecam cu 2 banane pasate. Adaugam  restul de ingrediente. Amestecam pana obtinem un aluat omogen. Turnam aluatul in tava ( eu am folosit o tava rotunda) si bagam la cuptor aprox 45 minute.

In a saucepan put 50g sugar to melt. Add 75g butter and let it form a caramel sauce. This sauce  pour in the pan . Put slices of banana (about 2 bananas) over the sauce  .
Dissolve the yeast in a little warm milk and mix with 2 mashed bananas . Add remaining ingredients. Mix to obtain a dough. Pour dought into pan (I used a round tray) and stuffing in the oven about 45 minutes.

Biban de mare cu legume la gratar / Grilled Seabass: Levrek Izgara




Ingrediente / ingredients:

- 2-3 bibani de mare  - Sea bass 2-3 (levrek)
- 3-4 linguri ulei de masline - 3-4 tablespoons olive oil
- cate o crenguta de rozmarin pentru fiecare peste - sprig rosemary for each fish
- mix de piper - Pepper mix
- sare de mare  - sea salt
- lamaie - Lemon
- patrunjel verde - Parsley
- oregano  - oregano
- 2-3 catei de usturoi - 2-3 cloves garlic
- pr legume la gratar - vinete, ardei kapia, ciuperci, cartofi, dovlecei sau orice alta leguma preferata - for grilled vegetables - eggplant, peppers Kapia, mushrooms, potatoes, zucchini or any other favorite vegetable

Ungem pestii cu ulei de masline, ii condimentan cu sare, piper, oregano, usturoi iar in interior punem crenguta de rozmarin. Ii punem in folie de aluminiu si ii punem pe gratar.

Brush fish with olive oil, spice them with salt, pepper, oregano, garlic and put inside the rosemary. We put them in foil and  then on  grill.



Legumele le taiem si le punem pe gratar. Am servit cu un sos de ardei copti si usturoi.

Cut the Vegetables  and put them on the grill. I served with a sauce of roasted peppers and garlic.

Supa crema de pui cu cartofi dulci / Creamy chicken and sweet potato soup



Ingrediente / ingredients:

- un piept de pui - Chicken breast
- 2 cartofi dulci - 2 sweet potatoes
- un morcov - a carrot
- o ceapa - an onion
- 1/2 pastarnac - 1/2 parsnip
- putina telina - celery
- putina radacina de patrunjel - parsley root
- 4 galbenusuri - 4 yolks
- 200 ml smantana pentru gatit - 200 ml cream for cooking
- sare si piper dupa gust - Salt and pepper to taste

Punem puiul la fiert, iar dupa ce adunam spuma formata, adaugam legumele taiate rondele.

Put the chicken to boil  and after collecting formed foam, add the sliced vegetables.


Dupa ce au fiert si legumele le punem in blender.

After boiling the vegetables  put them in the blender.



Turnam piureul in  supa de pui si punem la foc mic.

Pour puree in chicken broth and put on low heat.



Separat amestecam galbenusurile cu smantana si incorporam usor in supa amestecand continuu. Adaugam sare si piper dupa gust.  Mai lasam 5 minute si supa crema este gata.

Separately, mix the yolks with cream and incorporate in soup  stirring gently . Add salt and pepper to taste.  Leave for 5 minutes and cream soup is ready.

Fasole cu ciolan afumat / Kydney beans with smoked pork legs



Ingrediente / ingredients:

- un ciolan afumat - smoked pork legs
- 700 g fasole boabe - 700 g beans
- 2-3 foi de dafin - 2-3 bay leaves
- 2-3 cepe - 2-3 onions
- marar - dill
- cimbru - thyme
- 2 morcovi - 2 carrots
- pasta de tomate - tomato paste

Fierbem fasolea, o scurgem de 2 ori si in ultima apa adaugam ciolanul afumat taiat in bucati mai mici, 2-3 foi de dafin si cimbru.


Boil the beans, drain 2 times and  in the last water add smoked pork legs cut into pieces ,2-3 bay leaves and thyme.




Calim ceapa in 3-4 linguri de ulei.

Fry onions in 3-4 tablespoons of oil.




Adaugam morcovul .

Add carrot.




Turnam totul peste fasole, adaugam sare si piper dupa gust si pasta de tomate. Lasam sa fiarba pana scade sosul.

Pour it over the beans, add salt and pepper to taste and tomato paste. Let simmer until reduced the sauce



Se serveste cu salata de ardei copti sau oricare alta salata preferata.

Serve with salad of roasted peppers or any other favorite salad.

Madlene



Ingrediente / ingredients:

- 120 g unt - 120 g butter
- 130 g faina - 130 g flour
- 1/2 plic praf de copt - 1/2 sachet baking powder
- 1-2 linguri de cacao - 1-2 tablespoons cocoa
- 4 oua - 4 eggs
- 140 g zahar - 140 g sugar
- o esenta de vanilie - A vanilla
- o esenta de rom - A rum
- zahar pudra - powdered sugar

Batem ouale cu zaharul, adaugam faina cernuta impreuna cu praful de copt. Eu am facut si cu cacao, drept urmare am impartit compozitia in 2 si am inlocuit 2 linguri de faina cu 2 de cacao. In compozitia alba am pus esenta de vanilie si in cea de cacao am pus esenta de rom. Am adaugat treptat untul topit si racit si am amestecat usor cu o spatula.

Beat eggs with sugar, add sifted flour with baking powder. I made with cocoa, therefore we split the mixture into two and I replaced 2 tablespoons flour with 2 tablespoons cocoa. I put in white  composition  vanilla and in cocoa composition i put  rum. I added gradually melted and cooled butter and we mixed easily with a spatula.





Turnam compozitia in forma pentru madlene .

Pour the mixture into shape for Madlene.




Ele se coc la foc mic 15-20 minute.
Se servesc cu zahar pudra.

They bake on low heat 15-20 minutes.
Serve with powdered sugar.
