Risotto cu ciuperci / Risotto with mushrooms


Aceasta reteta este absolut delicioasa. Plina de arome si cremoasa, face dintr-un simplu orez un adevarat ospat.

This recipe is absolutely delicious. Flavored and creamy, made from a simple rice a real feast.

Ingrediente / Ingredients:

- 200 g orez - 200 g of rice
- 1 litru  supa de pui - 1 l of chicken soup
- 2-3 linguri de mascarpone - 2-3 tablespoons of mascarpone
- 200 g ciuperci intregi (micute) - 200 g mushrooms (small)
- un morcov - a carrot
- o ceapa - an onion
- 3-4 linguri ulei de masline - 3-4 tablespoons olive oil
- 50 g parmezan - 50 g Parmesan

Calim ceapa in uleiul de masline. Adaugam morcovul taiat cubulete, ciupercile intregi si lasam la foc mic 3-4 minute. Adaugam orezul si amestecam continuu timp de 2-3 minute. Turnam 3 sferturi din supa si lasam la foc mic. Verificam din cand in cand si mai adaugam restul supei.
Dupa ce a fiert orezul, adaugam mascarpone si amestecam energic. Punem un capac si lasam 15 minute. Dupa acest timp adaugam parmezanul.

Fry onion in olive oil. Add the carrot cut into the cubes, the  mushrooms and leave for 3-4 minutes on low heat. Add the rice and mix continuously for 2-3 minutes. We poured 3/4 of the soup and let it go. We check from time to time and add the rest of the soup.

After boiling the rice, add mascarpone and stir vigorously. Put a lid and leave it for 15 minutes. After this time add the Parmesan cheese.

Cartofi Lionezi cu branza / Lyonnaise Potatoes with cheese


Două ingrediente  sunt pregătite separat și apoi  împreună pentru a crea o combinație perfectă. Acesti cartofi merg foarte bine cu un fel  de mâncare de carne serviți cu un castron de fasole calita  în unt. Dar eu am adaugat branza........un gust senzational.

Two simple ingredients are prepared separately and then tossed together to create the perfect combination. These potatoes o very well with a simple meat dish, such us steak or pork chops, serve with a bowl of french beans, tossed in butter.But I added cheese ........ a sensational taste.



Ingrediente / ingredients:

- 900 g cartofi - 900 g potatoes
- 25 g unt - 25 g butter
- 15 ml ulei de masline - 15 ml olive oil
- 2 cepe medii - 2 medium onions
- branza - cheese

Cartofii se curata si se fierb in apa 15 minute. Se scurtg, se lasa sa se racoreasca putin si ii curatam de coaja. Ii feliem subtire.

Scrub the potatoes clean and cook in a large saucepan with plenty of boiling water for 15 minutes. Drain the potatoes and leae to cool slightly. When the potatoes are cool enough to handle, peel and finely slice them.


Prajim feliile de cartofi in putin ulei bine incins , pana devin crocanti.

Heat the vegetable oil ad shallow fry the potatoes in two batches until crisp.


Ceapa o taiem julien si o calim in unt pana devine aurie.

Melt the butter with some oil and fry the onion until golden.


Combinam cartofii cu ceapa si branza. Adaugam ulei de masline si branza din belsug. Am folosit o branza de oi cu un gust puternic ce scoate din anonimat aceste 2 ingrediente.


Combine potatoes with onion and cheese. Add olive oil and plenty of cheese. I used a sheep cheese with a strong taste that get from anonymity these two ingredients.

Cartofi evantai umpluti cu prosciuto si branza / Croque Monsieur Hasselback Potatoes



Ingrediente / ingredients:

 - 4 cartofi mari - 4 large potatoes
 - prosciutto   - prosciutto
 - cascaval   - cheese
 - mozzarella  - Mozzarella
 - 2 cani de sos bechamel - 2 cups of bechamel sauce

Pentru inceput feliem cartofii. Punem cartoful intre 2 linguri de lemn si il feliem dar nu pana jos.

Begin by slicing parallel lines down the length of each potato, using two wooden spoons as guides to prevent the knife splitting your tater in half.


Ii punem intr-un vas ii ungem cu ulei de masline si ii presaram cu sare. II tinem la cuptor aproximativ o ora.

Rub each one with oil and sprinkle with salt, then bake for at least one hour.



Dupa ce s-au copt, ii umplem cu cascaval si prosciutto. Pe unul l-am umplut cu branza de oi. Turnam sosul bechamel si ii mai bagam la cuptor pentru 20 de minute. Cu 10 minute inainte de a scoate tava punem mozzarella.

After they are baked, fill them with cheese and prosciutto. I filled one with sheep cheese. We pour the bechamel sauce and put them in the oven for 20 minutes. With 10 minutes before we remove the tray we put the mozzarella.


Lasam sa se racoreasca putin.

Let it cool a little.

Crutoane cu oregano / Oregano Croutons


Ingrediente / ingredients:

- o bagheta - a Baguette
- 2 linguri cu oregano - 2 tablespoons of oregano
- sare - salt
- ulei de masline - olive oil

Taiem paine in cuburi mici.

Cut bread into small cubes.


Adaugam oregano si uleiul de masline. Amestecam bine.

Add oregano and olive oil. Mix well.


Punem crutoanele intr-o tava tapetata cu hartie de copt si le intindem uniform. Presaram putina sare grunjoasa.

Place the crutoans in a baking paper tray and straighten them uniformly. Sprinkle with a little coarse salt.


Le lasam la cuptor pana se rumenesc frumos.

Leave them in the oven until they get brown.


Le putem servi la supe creme, salate sau ca atare.

We can serve in soups, salads, or as such.

Crochete de cartofi si branza / Potato Cheese Croquettes



Ingrediente / ingredients:

- 3-4 cartofi fierti - 3-4 boiled potatoes
- 100 g branza de oi - 100 g sheep's cheese
- 2 oua - 2 eggs
- 3 linguri de faina - 3 tablespoons flour
- 1/2 lingurita praf de copt - 1/2 teaspoon baking powder
- sare si piper dupa gust - Salt and pepper to taste


Zdrobim cartofii cu presa de piure si adaugam restul ingredientelor.

Mashed potatoes  and add remaining ingredients.





Formam bilute din compozitie si le dam prin faina.


We form balls of composition and give them flour.


Le prajim in baie de ulei pana se rumenesc.

Fry them in oil until crisp.


Le scoatem pe un servet de bucatarie pentru a absorbi surplusul de ulei si se pot servi calde dar si reci. Eu le-am servit cu o salata de castraveti si ceapa rosie, stropite cu otet balsamic.

Get them out on a kitchen towel to absorb excess oil and serve. And I have served with a salad of cucumber and red onion, sprinkled with balsamic vinegar.

Ciuperci umplute cu pui / Chicken Stuffed Mushrooms Recipe



Ingrediente / ingredients:

- 10 ciuperci - 10 mushrooms
- un piept de pui - Chicken breast
- 2 cepe - 2 onions
- cascaval - cheese
- 2 catei de usturoi - 2 cloves garlic
- sare, piper, paprika, cimbru - Salt, pepper, paprika, thyme
- o lingura de unt  - A tablespoon of butter

Calim ceapa in unt. Eu am pus o ceapa alba si una rosie. Cand ceapa s-a inmuiat, adaugam usturoiul zdrobit coditele de la ciuperci si pieptul de pui taiat cubulete.

Fry the onions in butter. I put a white onion and a red onion. When the onion has softened, add the crushed garlic, stems from mushrooms and diced chicken.




Adaugam condimentele dupa gust.

Add  spices to taste.




Punem ciupercile intr-o tava si le umplem cu compozitia de pui.

Put the mushrooms in a pan and fill them with chicken composition.



Le lasam la cuptor pana se coc ciupercile. Sper final adaugam cascaval ras pe fiecare ciuperca.

Se servesc calde!

Let them bake in the oven. Towards the end add grated cheese on each mushroom.
Serve warm!

Cartofi frantuzesti / Dauphinoise potatoes



Ingrediente / ingredients:

- 6-8 cartofi fierti - 6-8 boiled potatoes
- 4 oua fierte - 4 boiled eggs 
- 3 oua crude - 3  eggs
- 200 g smantana - 200 g cream
- 100 g parmezan - 100 g parmesan
- 100 g telemea - 100 g cheese
- 8 felii de cascaval - 8 slices of cheese
- nucsoara - nutmeg
- untbutter

Cartofii ii curatam de coaja, si ii taiem felii. Intr-un vas uns cu unt punem un strat de cartofi.

Peeled the potatoes and cut them into slices. In a tray greased with butter put a layer of potatoes.




Adaugam un strat de oua fierte.

Add a layer of boiled eggs.




Adaugam un strat de cascaval.

Add a layer of melted cheese.




Continuam cu un strat de cartofi, oua, parmezan, branza rasa si cartofi. Pe cartofi putem presara nucsoara, dupa gust.
Incheiem cu un strat de cartofi peste care punem ouale batute cu smantana.

We continue with a layer of potatoes, eggs, parmesan, grated cheese and potatoes. Over  potatoes can sprinkle nutmeg to taste.
We finish with a layer of potatoes and pour  beaten eggs with sour cream.


Bagam la cuptor pana se rumnesc frumos. Desupra putem rade putin cascaval.

Piure de linte / Mashed lentils



Ingrediente / ingredients:

- 2 cutii de linte - 2 boxes of lentils
- un catel de usturoi - A clove of garlic
- 2 ardei copti - 2 baked peppers
- 2-3 linguri ulei de masline - 2-3 tablespoons olive oil
- sare si piper dupa gust - Salt and pepper to taste

Mixam toate ingredientele.

Mixing all ingredients.



Se serveste cu orice tip de carne sau ca atare pe paine.

Pofta buna!

Serve with any meat .

Varza proaspata picanta / Spicy Fresh cabbage



Ingrediente / ingredients:

- 2.5 kg varza proaspata  - 2.5 kg fresh cabbage
- cimbru - thyme
- foi de dafin - Bay leaves
- sare  - Salt 
- 3-4 linguri pasta de tomate - 3-4 tablespoons tomato paste
- 1 lingura fulgi de ardei iute - 1 tablespoon cayenne pepper
- 3-4 linguri ulei de masline - 3-4 tablespoons olive oil

Tocam marunt varza si o frecam cu sare ca sa se inmoaie. O punem intr-o tava, adaugam uleiul, cimbru si frunzele de dafin. Bagam la cuptor pana scade toata apa care si-o lasa.

Cut the cabbage into small pieces and rub with salt to get her soften. Put in a pan, add oil, thyme and bay leaves. Stuffing in the oven until all the water decreases is evaporate.



Adaugam pasta de tomate si fulgii de piper. Amestecam bine.

Add tomato paste and cayenne pepper. Mix well.




Lasam la cuptor pana se caramelizeaza usor, amestecand din cand in cand.
Se serveste ca garnitura sau ca atare cu mamaliguta.

Pofta buna!

We leave  in the oven until slightly caramelizes , stirring occasionally.
Serve as garnish or with polenta.

Cartofi cu branza la cuptor / Baked potato with cheese



Ingrediente / ingredients:

- cartofi - potatoes
- 3 feluri de branza : eu am folosit branza de oi sarata, telemea de vaca si cascaval - 3 types of cheese: I used salty sheep's cheese, cottage  cheese and pressed cheese
- 2 oua - 2 eggs
- o lingura de unt - A tablespoon of butter
- o lingura de oregano - A tablespoon of oregano
- o lingura de smantana - A tablespoon of sour cream
- 100 ml frisca neindulcita - eu o folosesc pe cea de la Pilos - 100 ml unsweetened whipped cream - I use the one from Pilos

Cartofii de fierb se taie cuburi si se pun intr-o tava unsa cu unt.

Boil the potatoes , cut in cubes and place in a greased pan with butter.


Adaugam branza de vaca si amestecam.

Add cottage cheese and mix.



Intr-un castron batem ouale cu smantana, frisca si oregano. Adaugam branza de oi si amestecam bine.

In a bowl beat eggs with cream, whipped cream and oregano. Add sheep's cheese and mix well.



Turnam amestecul peste cartofi si introducem la cuptor pana se intareste usor.

Pour mixture over potatoes and stuffing in the oven until it hardens well.


Dupa ce s-a intarit , adaugam cascavalul si mai lasam la cuptor pana se topeste.

Once hardened, add  pressed cheese and  leave in the oven until melted.


Inainte de servire, se lasa in tava circa 10 minute.

Before serving, leave in pan about 10 minutes.


Am servit cu salata verde .

Mamaliguta speciala / Special polenta



Ingrediente / ingredients:

- 300 ml lapte - 300 ml of milk 
- 100 g sunca afumata - 100 g smoked ham 
- 50 g cascaval - 50 g cheese 
- 100 g malai - 100 g corn

Punem laptele la foc potrivit, iar cand incepe sa fiarba adaugam treptat malaiul.


Put the milk on medium heat and when it starts to boil slowly add the cornmeal.


Calim sunca afumata si o adaugam dupa ce a fiert mamaliguta bine. Cascavalul il radem pe razatoarea mare si il adaugam si pe el.

Fry the ham and add after the  polenta are cooked well. Add the grated cheese.


Amestecam bine pana se topeste cascavalul si o servim imediat.

Mix well until cheese melts and serve immediately.

Cartofi noi aromati / Flavored new potatoes


Ingrediente / ingredients:
- cartofi noi - Potatoes
- rozmarin - rosemary
- ulei de masline - Olive oil
- oregano - oregano
- 3-4 catei de usturoi - 3-4 cloves of garlic
- sare si piper - Salt and pepper
- o lingurita de unt - A teaspoon of butter
- smantana - sour cream
- marar - dill
- parmezan - parmesan

Spalam bine cartofii si ii asezam intr-un vas pentru cuptor.

Wash the potatoes and put it in a tray.


Ii stropim cu putin ulei de masline, adaugam usturoi strivit, oregano, rozmarin, sare, piper si untul.

Sprinkle them with a little olive oil, add the crushed garlic, oregano, rosemary, salt, pepper and butter.


Ii lasam la cuptor pana se rumenesc frumos.

We let in  the oven until nicely browned.


Separat facem un sos din smantana, marar, usturoi, sare si piper.

Separately make a sauce of sour cream, dill, garlic, salt and pepper.


Se servesc fierbinti cu parmezan ras ca atare sau ca o garnitura la  friptura preferata.

Serve hot with grated Parmesan.
