Supa crema de ciuperci / Creamy mushroom soup



Cea mai buna supa crema de ciuperci! Cu un gust intens de ciuperci, crutoane si cateva ciuperci trase putin in ulei de masline si aromate cu cimbru si usturoi. Delicios!

The best mushroom soup! With an intense taste of mushrooms, croutons and a few mushrooms pulled a little in olive oil and flavored with thyme and garlic. Delicious!


Ingrediente / ingredients:

- 1 kg de ciuperci champignon - 1 kg of champignon mushrooms
- 500 g ciuperci pleurotus - 500g pleurotus mushroom
- 850 ml supa de legume - 850 ml vegetable soup
- 300 ml smantana pt gatit - 300 ml of sour cream
- 3-4 catei de usturoi - 3-4 cloves of garlic
- 5 galbebusuri - 5 galbebusuri
- cimbru - thyme
- sare si piper - salt and pepper


Punem supa de legume pe foc si adaugam ciupercile. Pastram cateva ciuperci champignon pentru decor.

Put the soup on the fire and add the mushrooms. We kept some champignon mushrooms for decoration.



Dupa ce au fiert ciupercile, adugam sare si le pasam pana obtinem o crema fina. Amestecam smantana cu galbenusurile si turnam in fir subtire in supa. Punem pe foc , adugam usturoiul pisat si amestecam continiuu timp de 7 minute la foc mic.

Ciupercile ramase le tragem in putin ulei de masline cu sare si cimbru.

After the mushrooms have boiled, add the salt and pour into the blender until we get a fine cream. Mix sour cream with yolks and pour in thin wire into soup. Put on the fire, add the crushed garlic and mix for 7 minutes in a low heat.

The remaining mushrooms are fried in a little olive oil with salt and thyme.



Prajim niste paine, o ungem cu putin usturoi si cateva picaturi de ulei de masline.
Se serveste fierbinte!

Pofta buna!

Supa crema de morcov / Carrot cream soup



Ingrediente / ingredients:

- 5 morcovi mari- 5 large carrots
- o ceapa - an onion
- 2 cartofi - 2 potatoes
- un pastarnac - a parsnip
- putina telina - some celery
- 4 catei de usturoi - 4 cloves of garlic
- 2 linguri de smantana - 2 tablespoons of sour cream
- 3-4 fire de patrunjel verde - 3-4 yarns of green parsley
- sare si piper dupa gust - salt and pepper to taste

Curatam legumele si le punem pe toate la fiert.
Dupa ce au iert,le adaugam intr-un blender, adaugam patrunjelul verde si le pasam. Dupa ce compozitia este fina, adaugam smantana, sare si piper dupa gust. Mixam pentru omogenizare. Legumele pasate le punem intr-o oala si adaugam supa in care au fiert legumele pana ajungem la consistenta dorita.
Se serveste cu putina smantana deasupra.

Clean the vegetables and put them to boil.

After they boiled, add them in a blender, add the green  parsley and mix them. After the composition is fine, add sour cream, salt and pepper to taste. Mix them. Put the composition in a pot and add the soup in which the vegetables were boiled until we reach the desired consistency.

Serve with a little sour cream on top.

Supa crema de dovlecel / Zucchini cream soup


Ingrediente / ingredients:

- 3-4 dovlecei - 3-4 zucchini
- o ceapa - an onion
- 2 morcovi - 2 carrots
- un pastarnac - a parsnip
- putina telina - a little celery
- un cartof  - a potato
- 3 galbenusuri - 3 yolks
- 3 linguri de smantana - 3 tablespoons of sour cream
- crutoane  - croutons

Se pun legumele la fiert, se paseaza si se dilueaza cu supa in care au fiert legumele. Separat se amesteca galbenusurile cu smantana si se adauga cate putina supa. Tot amestecul se adauga in oala si se mai lasa la fiert 2-3 minute la foc mic.
Se serveste cu crutoane si putin parmezan.

Put the vegetables to boil, pass and dilute with the soup in which the vegetables were boiled. Separately mix the yolks with sour cream and add a little soup. All the mixture is added to the pot and boiled for 2-3 minutes at low heat.
Serve with croutons and a little parmesan cheese.

Supa crema de pui cu cartofi dulci / Creamy chicken and sweet potato soup



Ingrediente / ingredients:

- un piept de pui - Chicken breast
- 2 cartofi dulci - 2 sweet potatoes
- un morcov - a carrot
- o ceapa - an onion
- 1/2 pastarnac - 1/2 parsnip
- putina telina - celery
- putina radacina de patrunjel - parsley root
- 4 galbenusuri - 4 yolks
- 200 ml smantana pentru gatit - 200 ml cream for cooking
- sare si piper dupa gust - Salt and pepper to taste

Punem puiul la fiert, iar dupa ce adunam spuma formata, adaugam legumele taiate rondele.

Put the chicken to boil  and after collecting formed foam, add the sliced vegetables.


Dupa ce au fiert si legumele le punem in blender.

After boiling the vegetables  put them in the blender.



Turnam piureul in  supa de pui si punem la foc mic.

Pour puree in chicken broth and put on low heat.



Separat amestecam galbenusurile cu smantana si incorporam usor in supa amestecand continuu. Adaugam sare si piper dupa gust.  Mai lasam 5 minute si supa crema este gata.

Separately, mix the yolks with cream and incorporate in soup  stirring gently . Add salt and pepper to taste.  Leave for 5 minutes and cream soup is ready.

Supa de curcan cu galuste si ienibahar / Turkey soup with dumplings and ground allspice



Ingrediente / ingredients:

- carne de curcan - Turkey meat
- morcov - carrot
- telina - celery
- pastarnac - parsnip
- patrunjel - parsley
- ceapa - onions
- 2 oua - 2 eggs
- 2 linguri de ulei - 2 tablespoons oil
- 4-5 linguri gris - 4-5 tbsp semolina
- sare si piper dupa gust  - Salt and pepper to taste
- ienibahar boabe - ground allspice grains


Punem carnea la fiert, adunam spuma formata si lasam la foc potrivit aproximativ o ora. Adaugam legumele intregi si lasam sa se fiarba bine.
Dupa ce s-au fiert legumele le scoatem si strecuram supa.
Facem galustele astfel: batem bine ouale, adaugam uleiul, sare, piper si grisul. Trebuie sa reiasa o compozitie ca o smantana groasa. Cu o lingura formam galustele si le punem in supa. Adaugam cca 6 boabe de ienibahar si morcovul strivit cu furculita.
Lasam sa fiarba la foc mic pana fierb galustele.
La final tocam patrunjel proaspat.

We boiled meat, collect the  foam  and let at low heat for about an hour. Add vegetables  and let it boil well.
After  vegetables are boiled drain the soup.
Dumplings : beat the eggs well, add oil, salt, pepper and semolina. You have to indicate a composition as a thick cream. We form dumplings with a spoon and put them in soup. Add about 6 ground allspice grains and crushed carrots with a fork.
Let it simmer at low heat.
Finally cut  parsley.

Supa crema de somon / Salmon cream soup



Ingrediente / ingredients:

- 2 rondele de somon - 2 slices of salmon
- o ceapa - an onion
- 2 cartofi - 2 potatoes
- 2 morcovi - 2 carrots
- putina telina - Little celery
- un pastarnac - A parsnip
- 2 galbenusuri - 2 yolks
- 2 linguri de smantana - 2 tablespoons sour cream
- sare si piper dupa gust - Salt and pepper to taste

Fierbem legumele si pestele.

Boil vegetables and fish.



Dezosam somonul si pasam totul. Adaugam sare si piper dupa gust, smantana si galbenusurile. Mai lasam la foc mic cateva minute, amestecand continuu.

Deboned salmon  and stuffing everything in blender. Add salt and pepper to taste, sour cream and egg yolks. Let simmer a few minutes, stirring constantly.



Se serveste calda. Fetita mea o adora.

Serve hot. My daughter adore this cream soup.

Supa crema de dovleac / Creamy pumpkin soup



Ingrediente / ingredients:

- 300 g dovleac
- o ceapa
- un morcov
- 2 cartofi
- putina telina
- putin pastarnac
- 3 galbenusuri
- 3 linguri de smantana
- sare si piper dupa gust

- 300 g pumpkin
- an onion
- A carrot
- 2 potatoes
- a bit of celery
- a bit of parsnips
- 3 egg yolks
- 3 tablespoons sour cream
- Salt and pepper to taste

Curatam legumele si le punem la fiert.

Clean the vegetables and put them to boil.


Dupa ce au fiert, le pasam si diluam cu supa in care au fiert pana ajungem la consistenta dorita.
Amestecam galbenusurile cu smantana si o turnam in supa amestecand continuu.

After boiling, crush them and dilute with  soup boil until they reach at the desired consistency.
Mix egg yolks with cream and pour into the soup stirring constantly.


Se serveste rece sau calda cu smantana.

Serve hot or cold with cream.

Supa crema de cartofi dulci / Sweet potato cream soup



Ingrediente / ingredients:
- 2 cartofi dulci  - Two sweet potatoes
- o ceapa - an onion
- 2 morcovi - 2 carrots
- pastarnac - parsnips
- telina - celery
- 3 galbenusuri - 3 yolks
- 2 linguri de smantana - 2 tablespoons sour cream


Taiem legumele cubulete si le punem la fiert.

Cut the vegetables into cubes and put them to boil.





Pasam legumele, diluam cu supa in care au fiert in functie de consistenta dorita.

We smash the vegetables and diluted with soup depending on desired consistency.



Amestecam galbenusurile cu smantana, adaugam cate un polonic de supa ca sa aducem cat de cat la aceeasi temperatura si sa nu se branzeasca smantana, si o turnam amestecam continuu in oala. Mai lasam 2-3 minute la foc mic si supa este gata.

Mix yolks with sour cream, add one ladle of soup to bring  at the same temperature  and pour it into the pot continuously. We let simmer 2-3 minutes and the soup is ready.

Bors de peste / Fish Soup



Ingrediente / ingredients:

- 2 capete de peste - eu am avut somon - trunchi de peste - cozi de peste - 2 fish heads  - I had salmon - trunk fish - fish tails
- o telina - A celery
- un pastarnac - A parsnip
- 2-3 morcovi - 2-3 carrots
- o ceapa mare - A large onion
- un ardei rosu - A red pepper
- 3-4 linguri de otet - 3-4 tablespoons of vinegar
- 4 rosii coapte bine - 4  tomatoes 
- 2 cartofi - 2 potatoes
- leustean - lovage

Fierbem pestele.

Boil the  fish.



Dupa ce pestele a fiert il scoatem, strecuram zeama si adaugam legumele taiate cubulete.

After you get the fish cooked, strain the broth and add the diced vegetables.




Dupa ce au fiert legumele, adaugam rosiile  tocate marunt sau date pe razatoare.

After boiling the vegetables, add chopped tomatoes.



La final adaugam carnea,  otetul si leusteanul.

Supa crema de ciuperci Pleurotus / Cream of Oyster Mushroom Soup



Ingrediente / ingredients:

- 500 g ciuperci Pleurotus - 500 g oyster mushrooms
- o ceapa - an onion
- 2 morcovi - 2 carrots
- un cartof - A potato
- un ardei gras - A pepper
- o telina mica - A little celery
- un pastarnac - A parsnip
- 100 ml smantana pentru gatit - 100 ml cooking cream
- 2 galbenusuri - 2 yolks
- patrunjel - parsley

Punem legumele la fiert, in afara de ciuperci.

We boiled vegetables, except for mushrooms.




Spalam bine ciupercile si le curatam de impuritati.

Rinse thoroughly mushrooms and clean them of impurities.




Cand legumele sunt aproape fierte, adaugam ciupercile.

When the vegetables are almost cooked, add mushrooms.



In zeama obtinuta am pasat toate legumele.

I smashed all vegetables in obtained juice .



Amestecam galbenusurile cu smantana si turnam in fir subtire in supa, amestecand continuu. Mai lasam 5 minute la foc mic. Se adauga sare si putin piper dupa gust.
Deasupra punem patrunjel tocat.

Above we chopped parsley.

Supa crema de rosii / Tomato cream soup



Ingrediente / ingredients:

- 5 kg rosii - 5 kg tomatoes
- o ceapa - An onion
- un morcov - A carrot
- o cescuta de orez - A cup of rice
- un ardei gras - A yellow pepper
- sare si piper dupa gust - Salt and pepper to taste

Din aceasta cantitate de rosii, ies cam 3 l de supa.
Rosiile se spala bine si se taie in 4. Se pun intr-o oala fiert cu o cescuta de apa. Rosiile isi lasa apa si nu mai este nevoie de foarte multa apa.

From this quantity of tomato we get about 3 l soup  .
Wash tomatoes and cut it in 4. Place in a pot with a cup of  water. Tomatoes leave their water and do not need much water.




Calim ceapa si morcovul in 2-3 linguri de ulei de masline.

Fry onion and carrot in 2-3 tablespoons of olive oil.



Dupa ce au fiert rosiile, le separam de seminte si coaja. Le punem intr-o strecuratoare si le frecam cu o lingura de lemn sa scoatem pulpa.

After boiling the tomatoes, we separate the peel and seed from pulp . We put them in a strainer and rub them with a wooden spoon to get the pulp.



Turnam pulpa peste ceapa si morcov, adaugam orezul si ardeiul si lasam sa fiarba.

Pour the pulp over the onion and carrot , add the rice and pepper and let it boil.


La sfarsit punem sare si piper dupa gust.
Se serveste cu smantana si ardei iute.

Supa crema de leurda / Ramsons (Wild garlic) cream soup


Ingrediente / ingredients:

 - o legatura de ceapa verde - A bunch of green onions
- 3 legaturi de leurda - 3 bunch of Ramsons
- 2 cepe - 2 onions
- un pastarnac - A parsnip
- o bucatica de telina - A piece of celery
- 2-3 morcovi - 2-3 carrots
- 2-3 linguri de ulei de masline - 2-3 tablespoons of olive oil
- sare si piper dupa gust - Salt and pepper to taste

Se pun la fiert cepele, pastarnacul, telina, morcovii si ceapa verde.

Boil onions, parsnips, celery, carrots and green onions.


Dupa ce s-au fiert, le scoatem si punem la fiert in aceeasi apa leurda.

After you have cooked, remove them and put to boil in the same water Ramsons.


Pasam toate legume si subtiem cu apa in care le-am fiert. Eu nu le-am pasat chiar atat de fin.

Put in blender all the vegetables and thinned with water in which you boiled. Mash them fine as you like.


Compozitia obtinuta se pune iar la foc mic cca 5-10 minute, se adauga putin ulei de masline , sare si piper dupa gust.
Se serveste fierbinte dar e buna si rece cu crutoane sau smantana.

Ciorba de cartofi cu afumatura / Potato soup with smoked meat


Ingrediente / ingredients:

- cartofi - potatoes 
- ceapa - onions 
- morcov - carrot 
- pastarnac - parsnips 
- tarhon - tarragon 
- un ciolan afumat sau orice alta carne afumata - A smoked ham or any other  smoked meat
- 100 g smantana - 100 g cream 
- 4 galbenusuri - 4 egg yolks 
- un ardei rosu - A red pepper

Calim ceapa, morcovul, pastarnacul si ardeiul in 2-3 linguri de ulei de masline.

Fry onion, carrot, parsnip and pepper in 2-3 tablespoons of olive oil.


Adaugam ciolanul afumat maruntit . Eu am pus si osul ramas sa dea gust.

Add chopped smoked ham. I put the bone for the  taste.


Acoperim cu apa adaugam cartofii si lasam sa fiarba bine carnea.

Cover with water , add potatoes and let it simmer the meat.


Cand carnea este fiarta facem un amestec din galbenus si smantana pe care il adaugam in ciorba pentru consistenta.

When meat is cooked make a mixture of egg yolk and cream and add in soup for consistency.


La sfarsit adaugam sare si tarhon dupa gust.

Finally add salt and tarragon to taste.

Ciorba de oase afumate / Smoked bone soup


Ingrediente / ingredients:
- 1kg de oase afumatev- 1kg of smoked bones
- morcov - carrot
- ceapa - onions
- pastarnac - parsnips
- telina - celery
- 2-3 rosii - 2-3 tomates
- un ardei galben  - A yellow peppers
- leustean - lovage
- otet - vinegar
- taitei - noodles
- pasta de tomate - tomato paste
- cartofi - potatos



Fierbem oasele bine, taiem legumele si le adaugam in oala.

Boil the bones well, cut vegetables and add to the pot.

Dupa ce au fiert legumele , adaugam taiteii, rosiile cubulete si pasta de tomate daca mai este nevoie.

After cooking vegetables, add noodles, diced tomatoes and tomato paste if needed.
 


La sfarsit adaugam leusteanul tocat si otet dupa gust.

Finally, add the chopped lovage and vinegar to taste.

Supa crema de linte / Lentil cream soup



Ingrediente / ingredients:
- o conserva de linte - A tin of lentils
- un morcov - A carrot
- 2 cepe - 2 onions
- putina telina - Some celery
- un pastarnac - A parsnip
- un ardei rosu - A red pepper
- un galbenus de ou - An egg yolk
- 2 linguri de smantana - 2 tablespoons of sour cream
- sare si piper - Salt and pepper

Intr-o cratita, punem la fiert legumele.

Put the vegetables to boiled in a pot .


Dupa ce au fiert legumele, scurgem zeama, dar o pastram si pasam legumele impreuna cu lintea. Subtiem compozitia cu zeama de la legume.

After cooking the vegetables, drain the juice, but keep it and pass it with lentils. Thinned composition  with juice from vegetables.



Amestecam galbenusul de ou cu smantana si il turnam in supa.

Mix egg yolk with the sour cream and pour it into the soup.


Se serveste fierbinte.

Serve hot!
