Drob mixt / Mixed Terrine
Ingrediente / ingredients:
- organe de miel - lamb organs
- 200 g ficatei de pui - 200 g chicken liver
- 200 g carne de porc tocata - 200 g minced pork
- 4 legaturi ceapa verde - 4 bunch of spring onion
- 4-5 catei de usturoi - 4-5 cloves of garlic
- o legatura de marar - a bunch of dill
- o legatura de patrunjel - a bunch of parsley
- 4 oua fierte - 4 boiled eggs
- 6 oua crude - 6 eggs
- sare si piper dupa gust- salt and pepper to taste
Fierbem organele de miel iar carnea de porc si ficateii ii tragem putin la tigaie. Ficateii si organele de miel le tocam in cubulete mici. Punem carnea intr-un castron, adaugam ceapa verde tocata marunt si calita putin in 2-3 linguri de ulei de masline, usturoiul si verdeata tocata marunt, sare si piper dupa gust, si ouale batute.

Punem restul compozitiei deasupra oualor .

Bagam la cuptor pentru o ora, la foc potrivit.

Il lasam sa se raceasca si apoi il taiem.

Musaca greceasca / Greek Moussaka
Ingrediente / ingredients:
- 2 kg vinete - 2 kg of large round aubergines
- 1 kg carne tocata de vita sau amestec porc + vita - 1 kg ground beef or mix - pork + beef
- 1/2 cescuta ulei de masline - 1/2 cup olive oil
- 2 cepe mari - 2 large onions
- 5 rosii decojite - 5 peeled tomatoes
- 1/2 cana vin alb - 1/2 cup white wine
- sare si piper - salt and pepper
- branza feta - grated feta cheese
- 3-4 polonice de sos bechamel - ladles of bechamel sauce
- 3-4 cartofi feliati foarte subtire - 3-4 potatoes thin sliced
Curatam vinetele si le taiem felii . Le punem intr-o tigaie cu o lingura de ulei de masline pana se rumenesc usor. Cartofii ii feliem foarte subtire.

Punem carnea si ceapa intr-o tigaie cu ulei de masline pana se rumenesc. Adaugam vinul. Dupa ce scade sosul adaugam rosiile tocate marunt. Lasam sa scada sosul.

Intr-o tava pentru cuptor turnam un polonic de sos bechamel, punem un rand de vinete, un rand de branza rasa, un rand de carne si o luam de la capat pana terminam carnea si vinetele.
In a baking pan pour a ladle of béchamel sauce, put a row of eggplant, a row of grated cheese, a row of meat and start over to finish the meat and eggplant.
Desupra inchidem cu un rand de cartofi feliati subtire.

Chili con carne
Ingrediente / ingredients:
- 500 g carne tocata - 500 g minced meat

- o frunza de dafin - A bay leaf
- 2-3 catei de usturoi - 2-3 cloves of garlic
- o lingura de harissa - a tablespoon of harissa
- sare - salt
- patrunjel - parsley
Punem carnea la inabusit, adaugam patrunjel tocat marunt si ceapa.
We

Adaugam condimentele: usturoiul strivit, dafinul si harissa. Sarea o punem la sfarsit.

Pachetele cu carne tocata / Minced meat rolls
Ingrediente / ingredients:
- 400 g faina - 400 g flour
- 2 oua - 2 eggs
- un galbenus - an Yolk
- 100 g unt - 100 g butter
- 50 ml apa - 50 ml of water
- 2 linguri cu ulei - 2 tablespoons oil
- 1 kg carne tocata - 1 kg minced meat
- 3 cepe - 3 onions
- un ardei kapia - A sweet Kapia pepper
- o cutie de ciuperci - A box of mushrooms
- usturoi - garlic
- 100 ml vin alb - 100 ml white wine
- cascaval - cheese
- cimbru - thyme
- oregano - oregano
- marar - dill
- o lingura pasta de tomate - A tablespoon of tomato paste
- sare si piper - Salt and pepper
Pentru inceput pregatim aluatul din: unt, 2 oua, faina, ulei si apa.
Formam o bila din aluat, il punem in folie alimentara si il bagam in frigider cat pregatim umplutura.

Musaca de vinete / Eggplant Moussaka
Ingrediente / ingredients:
- vinete - eggplant
- cartofi - potatoes
- 500 g carne tocata - 500 g minced meat
- dovlecei - zucchini
- ceapa - onions
- morcov - carrot
- o foaie de dafin - A bay leaf
- pasta de tomate - Tomato paste
- 4 oua - 4 eggs
- 200 g branza - 200 g cheese
Vinetele le taiem felii subtiri si le punem pe gratar.
Cut Eggplant in slices and put them on the grill.
Cartofii ii fierbem si ii taiem felii.
Intr-o tava mai inalta punem un polonic de carne si un rand de felii de cartofi.

Adaugam felii de dovlecel si vinete. Si alternam pana terminam toate legumele, adaugand printre ele cate un polonic de carne. Incheiem cu un rand de cartofi.

Dam la cuptor la foc mic aproximativ 45 de minute .

Varza a la Cluj / Cabbage a la Cluj
Ingrediente / ingredients:
- varza dulce sau murata - Sweet or sour cabbage
- carne tocata de porc - Minced pork
- 2-3 cepe - 2-3 onions
- pasta de tomate - Tomato paste
- putin cimbru - thyme
- patrunjel - parsley
- orez fiert - Boiled rice
Calim ceapa pana devine translucida si adaugam carnea. O lasam pana isi schimba culoarea.
Fry onion until it becomes translucent and add the meat. Leave until they change color.
Punem compozitia intr-un castron, adaugam orezul fiert, sare, piper, patrunjelul tocat marunt si putina pasta de tomate. Amestecam bine.
Put mixture in a bowl, add the rice, salt, pepper, chopped parsley and a little tomato paste. Mix well.
Eu am folosit vasul roman pentru cuptor, dar se poate folosi orice vas/tava mai adanca.
Am pus pe fundul vasului putina pasta de tomate.
I used roman oven dish, but you can use any pot / pan deeper.
I put on the bottom a little tomato paste.
Tocam varza, dar nu prea marunt si o impartim in doua. O parte o punem peste pasta de tomate. Deasupra verzei, presaram putin cimbru.
Cut cabbage, but not too small and divided into two. Some put it over tomato paste. Above cabbage, sprinkle a little thyme.
Deasupra verzei, adaugam compozitia de carne si putina pasta de tomate.

Serve warm with sour cream or yogurt.

Carnea o punem la inabusit. Cand si-a schimbat culoarea adaugam ceapa verde tocata.Dupa ce s-a calit putin ceapa, adaugam sosul de soia, ciupercile, harissa, catelul de usturoi ras pe razatoarea mica si mararul.
