Ciuperci la tigaie / Spring Mushrooms on the pan



Ingrediente / ingredients:

- 1 kg de ciuperci - 1 kg of mushrooms
- o legatura de ceapa verde -  spring onions
- o legatura de usturoi verde - spring garlic
- o legatura de marar - a bunch of dill
- un ardei kapia -  kapia pepper
- sare, piper - salt, pepper
- rozmarin - rosemary
- ulei de masline - olive oil


Calim ciupercile in ulei de masline si adaugam restul ingredientelor . Se lasa la foc mic pana se inmoaie restul ingredientelor si se servesc ca atare sau ca o garnitura la felul de carne preferat.

Heat the mushrooms in olive oil and add the rest of the ingredients. Leave to low heat until the rest of the ingredients are soaked and serve as such or with your favorite meat dish.

Ghiveci de legume / Baked Vegetables



Ingrediente / ingredients:

- vinete - eggplants
- cartofi - potatoes
- ceapa - onion
- morcov - carrot
- rosii pasate - tomatoes sauce
- oregano, cimbru, sare si piper dupa gust  - oregano, thyme, salt and pepper to taste
- ulei de masline - olive oil
- 4-5 catei de usturoi - 4-5 cloves of garlic

Ceapa o taiem julien, iar restul legumelor rondele. Calim in baie de ulei, ceapa, morcovul, cartofii, iar vinetele le frigem intr-o tigaie cu putin ulei de masline.

Cut the onion  julien, and the rest of the vegetables in slices. Fry in oil bath, onion, carrot, potatoes, and eggplant in a frying pan with a little olive oil.
 

 


Intr-o tava punem putin sos de rosii (rosii, oregano, cimbru, sare si piper) adaugam un rand de cartofi,, vinete, ceapa si morcov, adaugam iar sos si continuam pana incheiem cu un rand de vinete.

In a tray put a little tomato sauce (tomatoes, oregano, thyme, salt and pepper) add a row of potatoes, eggplants, onion and carrot, add the sauce and continue until we finish with a row of eggplant.

 

 


Bagam la cuptor aproximativ o ora la foc mic. Facem un sos din usturoi si ulei de masline . Servim legumele calde cu acest sos sau pot fi o garnitura perfecta langa o friptura.

Cook in the oven for about an hour at low heat. We make a sauce from garlic  and olive oil. Serve the warm vegetables with this sauce or it can be a perfect garnish next to a steak.

Ciuperci la tigaie / Fried mushrooms






Ingrediente / ingredients:

- 1 kg ciuperci brune - 1 kg brown mushrooms
- o lingurita de unt - A teaspoon of butter
- 4-5 catei de usturoi - 4-5 cloves garlic
- o legatura de ceapa verde - A bunch of spring onions
- sare si piper dupa gust - Salt and pepper to taste
- cimbru - thyme
- patrunjel - parsley

Feliem ciupercile si le calim in unt.

Slice the mushrooms and fry them in butter.


Adaugam usturoiul si ceapa.

Add garlic and onion.


La final adaugam sare si piper dupa gust si garnisim cu patrunjel proaspat.

Finally add salt and pepper to taste and garnish with fresh parsley.

Dovlecei pane aromati / Flavored fried zucchini




Ingrediente / ingredients:
- 2 dovlecei - 2 zucchini
- 2 oua - 2 eggs
- o lingurita de oregano - A teaspoon of oregano
- sare si piper - salt and pepper
- 2-3 linguri de faina - 2-3 tablespoons flour
- o legatura de marar - A bunch of dill

Curatam dovleceii de coaja si ii taiem felii.

Pell the  zucchini  and cut them into slices.




Intr-un castron punem ouale, sarea, piperul, mararul si oregano.

In a bowl put the eggs, salt, pepper, dill and oregano.



Feliile de dovlecel le dam prin faina, apoi prin amestecul de ou si le punem la prajit in ulei incins.

Put flour on slices zucchini , then on egg mixture and put them to fry in hot oil.



 Le scoatem pe un prosop de bucatarie pentru a elimina excesul de ulei.

We put on a kitchen towel to remove excess oil.

Chiftelute de naut / chickpea patties


Ingrediente / ingredients:

- 400 g naut fiert - 400 g cooked chickpeas
- 2 cartofi  - 2 potatoes
- o ceapa alba - A white onion
- o legatura de ceapa verde - A bunch green onions
- un morcov - A carrot
- 3 linguri de pesmet - 3 tablespoons breadcrumbs
- sare si piper dupa gust - Salt and pepper to taste
- ulei de masline - olive oil


Cartofii si morcovul de fierb. Se paseaza impreuna cu nautul, se adauga ceapa tocata marunt, pesmetul, sare si piper dupa gust.

Boil the potatoes and carrots.  Crush them with chickpeas, add chopped onion, breadcrumbs, salt and pepper to taste.




Amestecam bine. Trebuie sa obtinem o compozitie tare.

Mix well. Must obtain a strong composition.



Formam chiftelutele si le punem intr-o tava pe hartie de copt. Le ungem cu ulei de masline.

We form patties and put them in a pan on baking paper. Brush them with olive oil.


Le lasam la cuptor pana se rumenesc frumos. Se pot praji si in tigaie dar trebuie marita cantitatea de pesmet pentru a nu se sfarama.

We leave in the oven until nicely browned. You can fry in pan but have increased quantity of breadcrumbs to not break in pieces.


Se servesc cu salata.

Varza calita cu carnati de Plescoi / Cabbage with Plescoi sausage


Ingrediente / ingredients:
- varza murata - pickled cabbage
- 500 g carnati de plescoi - 500 g Plescoi sausage
- boia iute - paprika
- cimbru - thyme
- 3-4 linguri de ulei de masline  - 3-4 tablespoons olive oil
- 500 ml suc de rosii - 500 ml of tomato juice
- 2-3 foi de dafin - 2-3 bay leaves

Tocam marunt varza si o punem intr-o tava cu 3-4 linguri de ulei de masline. Deasupra presaram boia , cimbru si dafinul. O bagam la cuptor pana se inmoaie.

Cut cabbage into small pieces and put it in a pan with 3-4 tablespoons of olive oil. Sprinkle paprika, thyme and bay leaves. Put in the oven until is soft.



Adaugam carnatii de Plescoi.

Add Plescoi.sausages .


Dupa ce s-a inmuiat bine varza adaugam sosul de rosii si lasam pana se patrunde bine.

After the cabbage has softened add the tomato sauce  and leave until it gets better.


Se serveste fierbinte cu mamaliguta.

Serve hot with polenta.

Fasole pastai cu rosii / Yellow beans with tomatoes


Ingrediente / ingredients:

- 500 g fasole pastai - 500 g  yellow bean 
- 2 legaturi de ceapa verde - 2 bunches of green onions 
- o ceapa - An onion 
- 300 g rosii tocate - 300 g chopped tomatoes 
- 2-3 catei de usturoi - 2-3 cloves of garlic 
- cimbru - thyme
- marar - dill 
- 2-3 linguri de ulei de masline - 2-3 tablespoons of olive oil 
- sare si piper dupa gust - Salt and pepper to taste

In 2-3 linguri de ulei de masline calim ceapa.

Fry the onion in 2-3 tablespoons of olive oil .


Adaugam fasolea, rosiile si usturoiul tocat marunt.

Add beans, tomatoes and chopped garlic.


Dupa ce au fiert rosiile adaugam cimbru, sare si piper si mai lasam pe foc 5 minute.

After cooking the tomatoes add thyme, salt and pepper and let on fire 5 minutes.


La sfarsit adaugam mararul tocat marunt.

Finally add chopped dill.

Mancarica de urzici / Nettles


Ingrediente / ingredients:

- 500 g urzici - 500 g nettles 
- 2 linguri de faina - 2 tablespoons of flour 
- 500 ml lapte - 500 ml of milk 
- o ceapa - An onion 
- 2-3 linguri de ulei de masline - 2-3 tablespoons of olive oil 
- usturoi - garlic

Punem urzicile spalate si curatate  sa fiarba.

We washed and cleaned nettles and put to boil.


In 2-3 linguri de ulei de masline punem o ceapa la calit. Dupa ce a devenit sticloasa adaugam faina.

In 2-3 tablespoons of olive oil put onions to cook. After becoming glassy add flour.


Adaugam laptele si amestecam continuu.

Add milk and stir continuously.


Adaugam urzicile pasate.

Add mashed nettles .


Potrivim de sare si piper, iar la sfarsit adaugam usturoiul.
Se serveste cu oua prajite.

Add salt and pepper and finally add garlic. 
Serve with fried eggs.

Tocanita de cartofi / Potato stew


Ingrediente/ ingredients:

- cartofi - potatoes 
- ceapa - onions 
- morcov - carrot 
- marar - dill 
- usturoi - garlic 
- ketchup de casa - Homemade ketchup 
- foi de dafin - Bay leaves 
- 100 ml vin alb - 100 ml white wine 
- o lingurita de cimbru - A teaspoon of thyme 
- sare si piper - Salt and pepper

Punem la calit ceapa in 2-3 linguri de ulei. Dupa ce s-a inmuiat, adaugam morcovul ras pe razatoarea mica.

Put to cook onion in 2-3 tablespoons of oil. Once softened, add grated carrot.




Cand morcovul este aproape gata, adaugam cartofii taiati cuburi, usturoiul strivit, vinul, frunzele de dafin si acoperim cu apa.

When carrots are almost done, add diced potatoes, crushed garlic, wine, bay leaves and cover with water.



Cand cartofii s-au facut, adaugam ketchup-ul, cimbru, sare si piper si mai lasam sa fiarba 5-10 minute.

When the potatoes are done, add the ketchup, thyme, salt and pepper and let it simmer for 5-10 minutes.




La sfarsit adaugam mararul tocat marunt.

Finally add chopped dill.



Am servit cu salata de ardei copti cu usturoi. 

I served with roasted pepper salad with garlic.

Risotto cu masline si ciuperci / Mushroom and Black Olive Risotto


Ingrediente / ingredients:

 - o ceapa mare - A large onion
- ciuperci - mushroom
- masline - olive
- orez arborio - Arborio rice
- 3-4 linguri de ulei de masline - 3-4 tablespoons olive oil
- sare si piper dupa gust - Salt and pepper to taste

Intr-o cratita pune la incins uleiul de masline, adaugam ceapa tocata marunt si ciupercile. Eu am folosit ciuperci champignon din conserva .

In a saucepan put olive oil, add chopped onion and mushrooms. I used canned champignon mushrooms.


Dupa ce s-au patruns bine, adaugam orezul si amestecam continuu sa nu se lipeasca de cratita. Daca mai trebuie, putem sa mai adaugam ulei de masline.

After you have fried well, add the rice and stir continuously to not stick to the pan. If you need, we can also add olive oil.


Adaugam apa (daca il vrem de post) sau supa de pui. La o portie de orez adaug 3 portii de lichid. 
Cand este aproape gata, adaugam maslinele.

Add water or chicken soup. In one cup of rice and add 3 cups of liquid.
When almost done, add the olives.


Este delicios!!!!
Se poate servi ca atare sau ca  garnitura la friptura.

It is delicious!!
You can serve at garnish on steak.

Pleurotus pane / Fried oyster





Ingrediente / igredients:

- 500 g ciuperci pleurotus- 500 g oyster mushrooms
- 2 oua- 2 eggs
- 2 linguri de faina- 2 tablespoons flour
- o legatura de marar- A dill
- sare si piper dupa gust- Salt and pepper to taste
- usturoi - garlic

Batem ouale cu faina, usturoiul pisat, sare, piper si marar.
Dam ciupercile prin aceasta compozitie si le punem la prajit. 

Beat eggs with flour, garlic,salt, pepper and dill.
Put mushrooms in this mixture and put them to fry.





Dupa ce s-au rumenit, le scoatem pe un servet absorbant.

After you have browned, remove them on absorbent towel.





Se servesc calzi dar si reci cu un sos preferat.

Serve warm or cold with a preferred sauce.
